Almond Butter Zest Cookies

 Homemade almond and butter oranges just cookies! 

1 cup of roasted or toasted almonds
2 cups of all-purpose flour or
1 cup white whole wheat flour 1 cup of all-purpose flour
salt to taste about a half a teaspoon
a page to a dash of nutmeg.
8 ounces of healthy butter (50% butter 50% light olive oil)
1 1/4 cups of confectioners sugar.
The scrapings from 1 vanilla bean.
1 teaspoon of finely grated orange or lemon zest.

1. The very 1st thing you want to do is preheat the oven to approximately 325°.  Once you got the oven started taking all mums the flower the nutmeg and salt put them all in a food processor and turn them into fine crumbs.

2.  Take a confectioners’ sugar and mix it with the butter and with a mixer on medium speed cream until light and fluffy.  Add the contents of the vanilla bean scrapings and the orange or lemon zest into this mixture.  You will want to refrigerate it for approximately an hour to an hour and a half.

3.  Once the dough is chilled roll in until 1/2 to 3/4 inch balls and place on a lined baking sheet.  (Parchment paper works best for lining)  Place the cookies approximately 1 inch apart on the lined baking sheet and bake until golden brown — somewhere between 20 and 25 minutes.  When done Place the cookies on a cooling rack and allow them to come to room temperature.  Just before serving dust with confectioners’ sugar Yum Yum!

The best part about almond zest cookies is how delicious they are.  The worst part about almond zest cookies is how quickly they disappear.  Enjoy!
